Dalmatian Pancetta

Dalmatian pancetta is a cured meat product made by salting fresh pork belly. After salting, the production process continues in drying plant where the meat is hung to dry in the cold north-eastern Dalmatian wind “bura”. Its specific flavour and colour is obtained by mild smoking.
The distinctive taste of Dalmatian pancetta is certainly due to fresh mountain air from Biokovo which brings aerosol of mountain herbs but also the scent of sea.
This traditional delicacy is consumed on its own, but has found its place in gastronomy as an indispensable addition to many gourmet delicacies (casserole, scrambled eggs ...).
